Spring/Summer Salads



I love, love, love salads! With the weather improving and fresh vegetables/herbs popping up everywhere there is no excuse to not eat your veggies. There is nothing like a weekly trip to your local Farmer's Market, it's one of my favorite things to do on the weekend. All your senses are activated. Farmer's Markets have plenty to see, taste, smell, touch and hear. It's a great experience. Plus you're buying local, which is always a great thing to do.

Now I can make a salad a full meal and be completely satisfied, I was vegetarian at one point. I know not everyone is like me and there are meat lovers out there. I have served these salads to major meat lovers and even they were asking for seconds. So I hope these salads are satisfying for you!

Watermelon, Mint and Feta with Balsamic Dressing

Raw Crudite Salad with Ginger Carrot Dressing

Mixed Greens, Cranberries, Goat Cheese and Ground Walnuts with Olive Oil


Watermelon, Mint and Feta Salad

You may have to wait until July or August for this one. It is very easy to make, fresh and so good for you!

Ingredients:
Baby Arugula
Fresh Seedless Watermelon
Fresh Mint (Start your own herb garden if you haven’t already)
Feta
Red Onion
2 Tablespoons of Aged Balsamic
1 Tablespoons of Extra Virgin Olive Oil
1 Lemon

Preparation:
Cut watermelon into small cubes, chop mint, onion and break up feta. Place in bowl with arugula. In a separate bowl add balsamic, olive oil and lemon give a quick whisk and drizzle over salad.



Raw Crudite Salad

Raw veggies are great for keeping your body in balance. This recipe is one of my favorite raw food recipes.

Dressing: I double or triple this recipe because I love it so much!

1 large carrot, peeled and roughly chopped
1 large shallot, peeled and roughly chopped
2 tablespoons roughly chopped fresh ginger
1 tablespoon sweet white miso
2 tablespoons rice wine vinegar
1 tablespoon roasted sesame seed oil
1/4 cup grapeseed oil
2 tablespoons water

Veggies:
Carrots, Green Beans, Radishes, Cucumbers, Zucchini

Preparation:
Pulse the carrot, shallot and ginger in a blender until finely chopped. I have a Magic Bullet and let me tell you it is magical! Scrape down the sides, add the miso, vinegar and sesame seed oil and whiz together. While the blender is going, slowly drizzle in the grape-seed oil and the water. Pour over veggies and enjoy!

Mixed Green Salad:

This salad I feast on year round and it’s fool proof. I love it!

Ingredients:

Mixed Greens
Dried Cranberries
Goat Cheese
Walnuts
Extra Virgin Olive Oil
Fresh Lemon
Fresh Ground Pepper
Preparation:
If you have a Magic Bullet, a food processor or something to that effect, take a hand full of walnuts per serving. Grind walnuts until they are a fine powder or fairly close to. Place greens, cranberries, goat cheese, ground walnuts, olive oil, lemon, pepper into a bowl. Use tongs to mix salad all together and enjoy!
